Species information
InterestAverrhoa from Averroes, arab philosopher spain 1126-1198, Moorish name Ibn-Ruschd.. Biliimbi comes from a Malayan word referring to the ridged fruit. Averrhoa bilimbi lives naturally in the teak forests of Burma and Malaysia. The Malaysiaan technique of making pickles is to pick it half ripe, wash it, dust it with salt, allow it to wilt uin hot sun and then submerge in brine, whereby it will last 3 months (Burkill, 1935). This fleshy sour fruit, rich in oxalic acid, is not eaten much fresh, locally, however if a small portion is eaten and water drank immediately afterwards, the sourness on the tongue changes to a sweetish sensation. The mature fruit is pickled, used in sauces, salads, and for making candied fruit. Because of its water content and high acidity the juice from the ripe fruits is used for cleaning, particularly removing stains from hands by farmers or workers in the field. Also could be used in pepper sauce or in products in place of citric acid. CONDICION RELISH To make a 15 lb batch-: Pre-cooked weight. Ingredients: A: Hot pepper puree 2.25 oz Salt 9.5 oz Sugar 6 lbs Condicion 7 lbs B: Cinnamon powder 20 g Nutmeg powder 7.0 g Mace powder 5.0 g Pimento powder 6.0 g Black pepper powder 12.0 g Ginger powder 10.0 g C: Vinegar 10 ml Method: 1. Wash condicion and trim ends. Dice or chop using a blender. 2. Mix ingredients listed under A. 3. Heat to boiling and simmer for 15- 20 minutes. Stir occasionally. 4. Add ingredients listed under B and allow to simmer for a further 10 minutes. 5. Add the vinegar and mix well for uniform dispersion of the acid and to prevent burning / sticking of the product. 6. When the product has thickened sufficiently, remove from the heat. 7. Fill into clean sterile bottles and seal. 8. Cool, wash and dry bottles. Label and store
